Boning & Fillet

The Boning and Fillet Knife serve one major purpose, removing skin and bones from meat. The thinner construction of the blades makes it flexible, allowing it to get in to small spaces. It typically comes in 5 – 6-inch lengths, and can feature flexible (more typical in filleting knives and great for poultry and fish) or stiff blades (typically boning knife is great for pork and beef).
